Some of My Favorite Recipes

I have really enjoyed cooking ever since getting married (by the way...can you believe it will have been a YEAR already in 3 weeks!). I cooked a good bit while in Oxford but not as much as I do now. I enjoy looking up recipes and cooking them for dinner that night. Soo......I thought I would share some of my favorite recipes!

Bacon Spaghetti

8 to 10 pieces of bacon
Onion
28oz can of crushed tomatoes
Noodles
Sugar (I use Splenda)

Cook your bacon. Leave the grease in pan. Put your chopped up onion in the bacon grease and let it cook. After the onion is cooked, add in the crushed tomatoes. Crumble your bacon and add it next. Put sugar in (usually around 1 tsp or so)
Add noodles to the consistency you like and WAALAH! Done and Delicious.

My mom has been making bacon spaghetti since I was little and it has always been one of my absolute favorite things!!! Definitely a must to try!

BBQ Chicken Salad
(I actually did this last night!)

2 Chicken Breast
Red Leaf Lettuce
Green Leaf Lettuce
Tomato
Can of Whole Kernel Corn (drained)
Can of Black beans (drained)
Can of French Fried Onions
Ranch (1/2 cup)
BBQ sauce (1/2 cup)

**I added Tortilla Strips (you know...the ones for salads!)
**It calls for Cilantro but I hate Cilantro..so I didn't add any

Lightly oil the chicken breast and cook them ( I added a little BBQ rub to them for a little flavor). Set aside.
Mix the Ranch and BBQ sauce for the dressing.
Mix your chopped lettuce/tomato, drained corn/beans and tomato.
Top the greens/beans/corn with the chopped up chicken and onion rings/tortilla strips and add the dressing! DONE!
We really enjoyed this...delish.

Tyler's Favorite Potatoes

I'm sure everyone has made these or something similar to them...but since TT loves them so much I thought I would share...and to be honest...I actually stole this recipe from my sister in law, Vanessa HA! :) Oh well.

Potatoes (any kind: red, baking...my fav are yellow/gold butter potatoes)
Dry Ranch
Bacon Bits ( I use Turkey Bacon Bits)
Ranch
Butter
Olive Oil
Shredded Cheese

Chop up your potatoes (how every many you need according to how many you are feeding). Put them in a pan that is okay to go in the microwave.
Add potatoes, a little butter, dry ranch packet and drizzle olive oil on top. Put in the microwave until they are steamed (mushy).
Preheat your oven, 350 will work, and put them in the oven with the cheese, Ranch, bacon bits and shredded cheese all on top. I usually cook them for around 20 minutes or so, until everything is good and melted. YUM:)

Hope you all can make these sometime soon and enjoy them as much as we do!
Its almost Friday, time to celebrate! (almost)
That's all for now:)

My Cousin's Wedding Weekend

My cousin, Dan, got married this past weekend to Lindsey Clements. They are a precious couple. My aunt and uncle gave the rehearsal dinner and it was so beautiful! I helped set everything up starting on Thursday night. I made the seating chart and I think it turned out pretty good. She decorated everything to fit his personality exactly. She had a four wheeler set up and sunglasses, boas etcc..so everything could take fun photos with them. The photographer went and got them developed while we were eating and we all filled out a page in a scrapbook that she is going to put together for them later.

Walking into the dinner..with the seating chart I made in the backgroud....

The day of the wedding I went and picked up Hannah and did her hair and Loris make up. I met all the girls at the beauty shop while they were getting ready.

The bride!

Mom and daughter....beautiful!!

Here are some pictures from the wedding....

angel!!

Photo Op with Evan

You would think that these (Hannah and Evan) are my children...but they aren't :( They are my cousin Lori's, but I refused to be called anything other than Aunt Kristen. I love them like they are my own though! I had a little photo op with Evan before my cousin's wedding (next post!) this past weekend. I just thought I would post them since they are so precious...if I say so myself! I am little biased but thats okay :)

Monster Trucks!!!!

For Valentines Day I bought Tyler tickets to go to Monster Trucks. His friend and girlfriend went with us, Chris and Jenna. We had so much fun! But we were a little dissapointed because the area they had to do what they do in was so small. They would go up the trucks, slam on the breaks, jump the cars, slam on the breaks, fly around to the next set of cars and do the exact same thing. It was still really fun to watch. I wouldn't mind going somewhere where they had more space to do it in.

Jenna and I at Old Venice afterwards

Hannah 4th Birthday

March 1st was my sweet Hannahs birthday. She turned 4 and had to go to Chuckie Cheese, so of course what do we do?? We load up and go to Chuckie Chesse! What punkin wants..punkin gets! She had the best time. She did not stop playing that game where you throw the balls up and get points...allllll night long. It was halarious how she threw the ball. I took picks, she would throw her hand back so far and chunk it.

Seee.......

I think the boys had as much fun as she did

Birthday girl!!! Sweet angel :)

All her tickets. She would get SO mad if you pulled them out of the thing.

She made a friend!

Vanessa's Birthday

February 17th was my sister in laws birthday. Chip threw her a suprise birthday at the bowling alley. He made all the plans and bought everything. I did the decorations and put everything together since he had to be the one to get her there. What a sweet little husband he is! Here are some pics from the night.....
